Amazon.com Review The USDA recommends pressure canning as the only safe method for low-acid foods such as vegetables, meats, and poultry. The Presto 23-quart pressure canner is more than adequate for any home canning needs. It's a professional-quality tool, made of heavy-duty aluminum, with stay-cool handles and a strong-lock steel lid. An accompanying rack fits down into the pot to keep jars up off the bottom, so that liquid can circulate underneath. And it can do double duty as a large pressure cooker. It's easy to cook healthfully with pressure cookers, since the food retains so much more of its nutrients and flavor. The sturdy lid locks down during canning or cooking; an inner sealing ring keeps the steam in. In addition to a pop-up pressure indicator and a simple steam release mechanism, there is an overpressure plug that will let off steam if it builds up excessively. The pressure dial gauge gives an accurate reading so that pressure can be kept constant during canning. This pressure canner is also a cooker that's useful for weeknight dinners or for any meal that needs to come together quickly. An accompanying booklet contains more than 50 recipes, ranging from basic soup stocks to stews and pot roasts--even sweets like English Plum Pudding or Brown Bread! Tenderize lean cuts of beef or pork, or cook chicken, fish, or vegetables faster than you can in a microwave, and without losing moisture. Nonabrasive cleansers are best for cleaning this aluminum pressure cooker, though occasional use of a fine metal polish will help the exterior keep its shine. Replaced our 40 yr old Presto canner with the 23 qt Presto 1781. Lighter than the old one of the same make. Easily does a double stack of pints. Garden was awesome this year and we're pleased with the results. Face of the dial could be easier to read to keep the 11 lb. pressure required. Put 1/2 c. white vinegar in water in canner before placing jars inside. Keeps the inside stain free. Great price with shipping included, about $30 savings or more from shopping in regular stores!

I've only used this as a water bath canner so far (not pressurized) but the size is great and works well on my smooth top stove. Only drawback so far is that everything comes out of the canner with a coating of white powder and the interior of the canner gets darker each time I use it. I'm not sure if it's the canner itself or the fact that our well water has some minerals in it. I didn't see any other similar comments. One of these days I plan to test it by using distilled water instead of tap. Until then I'm sticking to using it just as a canner and not putting food directly inside. Probably not a good idea anyway since it's made of aluminum and that's not entirely safe.
second one September 6, 2010 llefty I bought my first Presto 23qt canner about 16 years ago and it still works great,I bought the second one to increase the number of jars I can process at one time.

Glad I opted for this size. To get more pints done as a pressure cooker, you double-deck them... made me nervous at first, but ended up being great in the end, especially if you only have a couple of extra jars that didn't fit in the bottom - no worries, double-deck! (Can't do that with quarts, of course.) Used it the first weekend after receiving it as a pressure canner. Have since used it for water bath canning and it's been just great. Didn't realize at first it was a dial gauge machine... the only drag part is going to have to calibrate the gauge (though I hear the coop extension offices do that).
